Adobo Tacos with Mango Salsa
Ingredients:
For the Adobo Meat:
- 1 lb pork or chicken, cut into small pieces
- ¼ cup soy sauce
- ¼ cup vinegar
- 4 cloves garlic, minced
- 1 tsp black peppercorns
- 2 bay leaves
- ½ cup water
- 1 tbsp cooking oil
For the Mango Salsa:
- 1 ripe mango, diced
- ½ small red onion, finely chopped
- 1 small tomato, diced
- 1 tbsp cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
For Serving:
- Small corn or flour tortillas
- Sliced radishes (optional)
- Crumbled queso fresco or cotija cheese
- Lime wedges
Instructions:
Serve with lime wedges on the side.
Cook the Adobo:
In a pan, heat oil over medium heat. Sauté garlic until fragrant.
Add the pork or chicken and sear until browned.
Pour in soy sauce, vinegar, black peppercorns, bay leaves, and water.
Simmer on low heat until meat is tender and sauce reduces (about 30–40 minutes).
Make the Mango Salsa:
Combine mango, onion, tomato, cilantro, and lime juice in a bowl.
Season with salt and pepper to taste.
Assemble the Tacos:
Warm the tortillas.
Add a generous amount of adobo meat to each tortilla.
Top with mango salsa, sliced radishes, and crumbled cheese.
